Chilled Mango Lassi Soup

Chilled Mango Lassi Soup
Makes 12 to 16 servings
3 cups cubed fresh mango

2 cups vanilla yogurt

1/2 cup honey

3/4 cup milk

Garnish: prepared granola, fresh mint sprigs


1. In a blender, combine mango, yogurt, honey, and milk. Puree until mixture is very smooth. Refrigerate until well chilled, approximately 1 to 2 hours.

2. Garnish each serving with a sprinkle of prepared granola and a sprig of fresh mint. Serve cold.


TIP: A ripe mango has a full, fruity aroma. It can be considered ready to eat when slightly soft to the touch and yielding to gentle pressure, like a ripe peach.
